I have had this wonderful spinach salad recipe for a long time. It was given to me by my friend, Bonnie when we lived in Rose Park.
Spinach leaves, cut up, no stems
purple onion
bacon, cooked and broken into pieces
hard boiled eggs
Dressing:
2/3 c vinegar
3/4 - 1 c sugar
2 tsp mustard
2 tsp salt
2 tsp grated onion
Put dressing ingredients in blender. Puree very finely. Slowly add:
1 c oil
2 tsp poppy seeds
